The word ‘Kolfok’ has its origins in Burgenland. It describes a character who critically decides against convention. Stefan's wines are not produced or made, rather he wants to act modestly as an observer, giving the wines themselves all the freedom they need. Drawing authenticity from the few old vineyards that remain in the region. Wine that has become and not been made.
