Today, the top of the champagne world is more colourful than ever. The third part of the Champagne trilogy at Almhof Schneider looks at the different ways of producing exceptional champagnes: reduced ageing in steel or oxidative ageing in wooden barrels, with short or extended lees ageing, from a single parcel or as a classic blend, vintage or reserve wines, full of youthful energy or with noble tertiary aromas. They range from iconic luxury brandies to the rarest vintner's champagnes, which fetch gigantic prices on the secondary market. Everything revolves around one question: What makes a world-class champagne today?
